Pulled "Pork" Nachos

A Mexican party favourite with all the delicious trimmings perfect for friendly gatherings, footy nights or a comfort weeknight feast!

Ingredients
  

Nachos

  • 1 packet vEEF® Pulled "Pork"
  • 3 garlic cloves, chopped
  • 1 onion, chopped
  • 4 cups corn chips
  • 1 cup dairy-free cheese, shredded
  • 1 avocado, diced
  • dairy-free chipotle mayonnaise
  • fresh coriander, chopped

Pico de Gallo

  • 2 tomatoes, diced
  • ½ red onion
  • ½ red chilli
  • ½ capsicum
  • 3 limes
  • vegetable oil
  • salt

Instructions
 

Pulled "Pork"

  • In warm pan with a bit of oil, caramelise the pulled "pork" for 3-5 minutes until it has good colour all around.
  • Push the pulled "pork" to the side of the pan and add the garlic and onion. Cook until they turn a light golden colour.
  • Mix all ingredients in the pan, remove from heat and set aside.

Pico de Gallo

  • Chop all ingredients and season it with lime juice, vegetable oil and salt to taste. 

Assembling the Nachos

  • Arrange the corn chips in a large serving plate. Add the pulled "pork", shredded cheese, pico de gallo, diced avocados, chipotle mayonnaise. Finish with chopped fresh coriander. 

Notes

This recipe is easily adaptable to your liking! Feel free to add black beans, roasted sweet potato or any other favourite cheeses or creamy dressings that tickle your fancy.
